Banana Bread with Cinnamon Sugar

  • 4 eggs
  • 2/3 cup buttermilk
  • 1 cup butter
  • 2 cups mashed bananas (About 6 bananas)
  • 3 cups white sugar
  • 3.5 cups all-purpose flour
  • 2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoon vanilla extract
  • **Cinnamon Sugar**
  • 1/2 cup sugar
  • 1 1/2 teaspoons cinnamon

  1. Preheat oven to 325 degrees F (165 degrees C). Spray line two 9×5 inch loaf pan with parchment paper.
  2. Blend together butter and sugar until creamy.
  3. In a bowl, chopped and mashed bananas, it is best to use very ripe bananas.
  4. Add the mashed bananas into the mixer with the butter and sugar.
  5. Add in eggs, vanilla and buttermilk.
  6. In a small bowl, mix together cinnamon and sugar. Set aside.
  7. Take about 2tbps of cinnamon sugar and add into the mixture and save the rest for later.
  8. Sift together the flour, baking soda and salt. Add to banana mixture. Mix well.
  9. Evenly pour into prepared loaf pans.
  10. Bake for 1 hour and 10 minutes or until a cake tester inserted in the center comes out clean.
  11. Once done, quickly pour and spread cinnamon sugar over top of the loafs.
  12. Take out of baking pan and let it rest over wire racks. Enjoy!
