So I made some Banana Bread with Cinnamon Sugar and it turned out pretty well. I am pretty happy with this recipe and would definitely make it again, might even make for some good cupcakes. It's a very simple recipe that most people should be able to make. Enjoy!
Ingredients
- 4 eggs
- 2/3 cup buttermilk
- 1 cup butter
- 2 cups mashed bananas (About 6 bananas)
- 3 cups white sugar
- 3.5 cups all-purpose flour
- 2 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoon vanilla extract
- **Cinnamon Sugar**
- 1/2 cup sugar
- 1 1/2 teaspoons cinnamon
Directions
- Preheat oven to 325 degrees F (165 degrees C). Spray line two 9×5 inch loaf pan with parchment paper.
- Blend together butter and sugar until creamy.
- In a bowl, chopped and mashed bananas, it is best to use very ripe bananas.
- Add the mashed bananas into the mixer with the butter and sugar.
- Add in eggs, vanilla and buttermilk.
- In a small bowl, mix together cinnamon and sugar. Set aside.
- Take about 2tbps of cinnamon sugar and add into the mixture and save the rest for later.
- Sift together the flour, baking soda and salt. Add to banana mixture. Mix well.
- Evenly pour into prepared loaf pans.
- Bake for 1 hour and 10 minutes or until a cake tester inserted in the center comes out clean.
- Once done, quickly pour and spread cinnamon sugar over top of the loafs.
- Take out of baking pan and let it rest over wire racks. Enjoy!
