In a ziplock or clear bag, put in the onion, garlic, fish sauce, calamansi/lemon juice, salt and pepper, lemonpepper, brown sugar and 2-3 lemongrass. Mix all the ingredients together. Add in the Chicken and shake it all together inside the bag, make sure the chicken is properly covered in the mixture. Let it marinade in the refrigerator overnight or at least 4-6 hours.
Preheat oven to 300°C.
Take the chicken out of refrigerator and put it in a roasting tray. Keep the marinade from the bag and put it in a small bowl, add cooking oil with the marinade and set aside.
Stuff the cavity of the chicken with the lemongrass used in the marinade and adding in the bay leaves and another 2-3 new lemongrass.
Brush the chicken with the marinade and oil mixture. Put the chicken in oven and roast for about 2 hours depending on the size or when the internal temperature reach 165F.
Baste the chicken with marinade sauce a couple of times every 30 minutes or so.
When chicken is fully cooked. Let the chicken rest for 15 minutes before serving. Enjoy!
Lechon Manok is Filipino style roasted chicken made to have a similar flavor as the popular pork roast. It’s a very easy recipe however it just takes a little bit of time since it requires to be marinated. The key ingredient is lemongrass, it brings out a very nice aroma and taste to the dish. I recommend always using a meat thermometer whenever you cook meat, it makes it very easy to tell when things are cooked properly but more importantly your food is always nicely done and juicy. Overall, this dish taste great, easy to make and makes for a nice meal.
