In a bowl, Sprinkle 1.5 tbsp gelatin over 6 tbsp water and keep aside to soften it for 5 minutes.
In another saucepan heat milk or cream at medium heat.
Add condensed milk, combine well.
Let the milk come to a boil. Remove the saucepan from the heat and let it cool down, 15-20 minutes. Don’t add mango puree to the boiling milk, it will curdle so make sure the milk has cooled down.
Add in softened gelatin and mix well with a wisk.
Once the milk mixture has cooled. Slowly add mango puree while stirring to the milk till it has combined well.
Pour the mixture into puddings cups, ramekins or into cupcake pans. Make sure to grease container with cooking spray before pouring in the mixture.
Put the pudding in the refrigerator for 30-45 minutes till it sets.
Add additional condensed milk if desired when served. Enjoy!
Mango Pudding is an Asian dessert originating from either Hong Kong or India. It’s mainly served cold and either plain or with a sauce. It’s nice and a refreshing dessert for either a hot day or if you want to cleanse your pallet. It’s very easy to make and can be a lot of fun for kids. There are a few variations of this recipe so this is just one variant of it however most are pretty similar, some use real ripe mangos which would be ideal however if you can’t find some you can get mango puree from the stores pretty easily. Overall a great dessert dish and easy to make for any occasion.
