Popo’s Pork Hock

  • 2 Pork Hocks, cut into 1-2 inch strips
  • 5 cups Water
  • 1.5 cups Brown Sugar
  • 1.5 cups Vinegar
  • 3 slices of Ginger, 1 cm thick
  • 1 tbps Salt
  • 1/2 cup Cloud Ear (Black Fungus)

  1. In a bowl, add in cloud ears and fill with water until cover, let it expand.
  2. In a pressure cooker, add in water, sugar, salt, ginger and bring to boil.
  3. Once it has boiled, add in peanuts first then pork hocks, and then vinegar last. Bring it back to a boil and make sure to mix well but keep the peanuts at the bottom.
  4. Once it has boiled again, seal the pressure cooker and turn the heat to medium-high for 40 minutes.
  5. Remove from heat and leave pressure cooker to sit until the pressure knob has lowered, about 15 minutes depending on your cooker.
  6. Once you can open it again, add in cloud ear fungus and mix well. Adjust flavor to taste, some prefer a bit more vinegar or sweeter taste. Server Hot and Enjoy!



Today I’m sharing a special recipe… my grandmother, Popo’s recipe for pressure cooked Pork Hock. Some of my treasured memories for when I was a kind in the Philippines coming over to my popo’s house and she would cook us various kinds of dishes and this is one of them. It is also one of my favorite, It’s not something you should eat everyday but might not stop you from wanting to. It’s very simple and with the added use of a pressure cooker, It becomes a quick dish to make and very tender. Some key points to remember when making this, make sure the liquid is boiling before adding in the pork hocks, make sure the peanuts are at the bottom of the cooker so they can cook properly and wait to add the cloud ear fungus at the very end so they don’t get too soft. Overall a great recipe, it’s easy and simple that anyone can make it and a nostalgic one for me
