Seafood Linguine

Ingredients

  • 1 lbs linguine pasta
  • 2 tbsp butter
  • 1 lbs shrimp – no head
  • 6 cloves garlic, minced
  • 1 cup heavy cream or half-and-half
  • 6 tbsp Parmesan cheese
  • 1 tbsp chopped fresh parsley
  • salt and pepper to taste
  • 1/2 lbs mussels or clams *optional*

Directions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain
  2. If you are not cooking mussels or clams skip to next step, Heat on high a dry pot with a lid, once hot put in mussels or clams and close the lid. Let it cook for about 1-2 minutes or until shells open. remove from heat and put in a bowl and set aside.
  3. In a large skillet under medium heat, put in the butter and garlic and cook for about one minute or until brown.
  4. Pour in cream and stir.
  5. Sprinkle Parmesan cheese in one tablespoon at a time, stirring constantly.
  6. After all Parmesan is added, mix in parsley, mushrooms and salt. Stir frequently for about a minute.
  7. Add in shrimp, if shrimp is raw mix and cook in the sauce until most start turning orange/red color. Do not overcook.
  8. Once the shrimp are starting to change, add in the cooked pasta and mix well.
  9. Add mussels or clams and mix all together.
  10. Serve hot with additional chopped parsley on top. Enjoy!

This is an Italian dish, Seafood Linguine made with Alfredo cream style sauce. It is a fairly easy recipe and quick to make. Be careful not to overcook the shrimp/seafood and try to put them near the end so they are fresh and cooked nicely. Don’t let your noodle cook too much in the boiling water, It is best to finish cooking it along with the pasta and everything else. Overall, it taste great and easy to make so i definitely recommend it to anyone at different cooking level.
