Sugar Cookies with Royal Icing

  • 1 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 tbsp vanilla
  • 3 cups flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • **Royal Icing**
  • 1/3 cup pasteurized egg whites
  • 1/2 tsp cream of tartar
  • 3 cups sifted icing sugar

  1. Mix flour, baking powder and salt in a bowl & set aside.
  2. In a separate bowl, combine butter, sugar, eggs, and vanilla. Beat until mixed well.
  3. Add the flour mixture in slowly & mix well.
  4. Chill for at least an hour to stiffen the dough. Roll the dough out with a rolling pin & cut shapes with cookie cutters OR form dough balls and flatten into thick circles with your hands.
  5. Preheat oven to 400F.
  6. Bake 10-15 mins or until just the edges of cookies start to turn a very, very light golden brown. Don’t over-bake. For an extra-doughy consistency, remove the cookies before the edges start to brown. Set aside, and let it cool completely.
  7. Beat egg whites with cream of tartar until foamy. Gradually beat in icing sugar until stiff, about 4 minutes.
  8. Add in drops of food coloring to your liking. Cover with damp cloth to prevent drying out.
  9. Apply icing on cookies and let it sit until icing hardens. Enjoy!
